Applecakes
1 cup whole wheat flour, a little oil, a teaspoon of baking powder, cinnamon, 1/4 cup sugar, a pinch of nutmeg, four eggs and enough milk to make it the right consistency. I thin slice up a tart eating apple for fun or leave out the sugar and use a sweet apple instead. I also toss in a few pecans or walnuts for effect. Cook on a hot greased griddle like a pancake but small hand sized portions. Good cold as leftovers as well.
I found a small gravy ladle works great to get a “handcake” about the 4” diameter. Four to the pan.
I like them with a pad of butter and huckleberry or blackberry jam.
