Airstream Breakfast - who's in?

For fast starts, since we are all allergic to morning, it's hot tea, sympathy, and pastry. Painkillers optional.

Morning allergy is genetic in my crowd. Even the dogs sleep in if they can...😐

If you think of breakfast food as anything you want it to be, you'll have a lot more options. If you prefer to stick to traditional breakfast foods, (somewhat traditional anyway), try avocados spread on toast with a tomato slice. Or sautéed mushrooms on toast. A frittata in your cast iron skillet on the stove or outside in a fire pit is always delicious. Use leftover potatoes from a previous dinner, half a pepper, leftover onions, herbs, cheese, anything you have leftover, throw in in. Pour eggs or eggs and milk on top.

Daughter loves toast with ripe avocado schmeared over it. Two slices toast, one smallish avocado. What's not to like?

Oatmeal and bananas with a twist

All above breakfast ideas have me salavating. My husband and I are whole food plant based eaters and really stick with one thing for breakfast. However I have made it taste almost like banana bread by cooking the bananas in the oatmeal.
Recipe: 1 1/3 cup oatmeal
3 cups almond milk original unsweetened
1 banana sliced
Lots of cinnamon
Microwave for 8 mins, let sit while you drink your coffee.
Add maple syrup as required.

There seem to be a lot of oatmeal lovers here.

My favorite warm weather breakfast is homemade muesli...

4-6 cups quick oats, lightly toasted with 1 cup or more nuts of choice, cooled.

I use a cookie sheet in a low oven for 10-15 minutes, stirring a couple of times to toast evenly.

When completely cooled, pour into a large bowl and stir in a couple of tablespoons brown sugar and a couple of cups of dried fruit of choice...I like dried cherries and cranberries.

Store in sealed container.

For breakfast, scoop into a bowl and add a generous amount of milk.

Let soak awhile to soften.

Enjoy.

We love the NordicWare Waffle Iron (made in USA). Works great on the stove top. Depending on the stove, the propane burner can be too hot and concentrated so I like to use a cast iron diffuser under the waffle iron.

I BAKE my bacon ahead of time, bring homemade GOETTA fried in an iron skillet, make omelets with cream cheese added in a non stick pan, heat bacon in toaster oven, serve with toasted English Muffins. Don't mind the dishes at all!

OK! .... Waffles! .... Thanks for that suggestion. A griddle style waffler is a solution we have considered. Folks tell us, they work well. Our concern is that our big skillet takes up more than one burner and there really is not room for a griddle type solution. We think a small electric waffle maker is the answer, but for off grid folks the griddle style looks like the perfect waffle lover solution. Breakfast for all, yes! Pat

Basic oatmeal (quick or regular) than use ICE CREAM for the milk and sugar. Vary the ice cream flavors: fresh peach, strawberry, butter pecan , butter brickle and etc. Heart healthy oatmeal and than the calories and fat. But oooooh soooo good!

I can't stomach another packet of Quaker Instant Oatmeal.
I removed them from the trailer.
When I eventually eat them at the house I will buy no more.
My tastes are changing.

While I'm a pancakes & eggs/breakfast taco guy (sometimes with bacon...), Kim got me started on a bowl of yogurt, Cheerios & fruit lately which I must admit, leaves me feeling a lot more energetic in the AM, especially if hitting the road.

Seems as I get older, my tastes don't really seem to change as much as what my body is telling me to do differently... Dang, it's hard growing up!

Blueberry buttermilk cornmeal pancakes with maple syrup and bacon! Our new family favorite and pretty easy in an iron skillet. Love all these ideas. Yall are my people!

To both Vicki and I one of the high points of a camping trip is a breakfast cooked outside over a campfire. I can't think of anything that smells better than bacon cooked over a campfire. We always cook up a huge pile of bacon for BLTs later.

Of course it always happens around 10-11 (brunch?) - neither one of us is a morning person (be especially careful around Vicki before she's had *two* cups of tea ).

I understand. Two tea bags in a huge cup with water just the right temperature.

If we are lucky, we remember to get up well before checkout time in a campground. Brunch, in our mind, is more civilized than breakfast early AM.
