I BAKE my bacon ahead of time, bring homemade GOETTA fried in an iron skillet, make omelets with cream cheese added in a non stick pan, heat bacon in toaster oven, serve with toasted English Muffins. Don't mind the dishes at all!

OK! .... Waffles! .... Thanks for that suggestion. A griddle style waffler is a solution we have considered. Folks tell us, they work well. Our concern is that our big skillet takes up more than one burner and there really is not room for a griddle type solution. We think a small electric waffle maker is the answer, but for off grid folks the griddle style looks like the perfect waffle lover solution. Breakfast for all, yes! Pat

Basic oatmeal (quick or regular) than use ICE CREAM for the milk and sugar. Vary the ice cream flavors: fresh peach, strawberry, butter pecan , butter brickle and etc. Heart healthy oatmeal and than the calories and fat. But oooooh soooo good!

I can't stomach another packet of Quaker Instant Oatmeal.
I removed them from the trailer.
When I eventually eat them at the house I will buy no more.
My tastes are changing.

While I'm a pancakes & eggs/breakfast taco guy (sometimes with bacon...), Kim got me started on a bowl of yogurt, Cheerios & fruit lately which I must admit, leaves me feeling a lot more energetic in the AM, especially if hitting the road.

Seems as I get older, my tastes don't really seem to change as much as what my body is telling me to do differently... Dang, it's hard growing up!

Blueberry buttermilk cornmeal pancakes with maple syrup and bacon! Our new family favorite and pretty easy in an iron skillet. Love all these ideas. Yall are my people!

To both Vicki and I one of the high points of a camping trip is a breakfast cooked outside over a campfire. I can't think of anything that smells better than bacon cooked over a campfire. We always cook up a huge pile of bacon for BLTs later.

Of course it always happens around 10-11 (brunch?) - neither one of us is a morning person (be especially careful around Vicki before she's had *two* cups of tea ).

I understand. Two tea bags in a huge cup with water just the right temperature.

If we are lucky, we remember to get up well before checkout time in a campground. Brunch, in our mind, is more civilized than breakfast early AM.

My favorite is Grand Marnier French Toast...I cook it (and bacon!) on the griddle outside. I lot less mess than pancakes and very tasty! I usually invite our neighboring campers over to join us...yummy! Also can be made the night before "bread pudding" style & just stuck in the oven in the morning for a breakfast potluck.

Another idea is to tweak the recipe using Amaretto instead of the Grand Marnier and adding toasted almonds (instead of orange peel) on top.
