I found this set of toaster-oven sized bake/cookware at Safeway. They fit the Airstream criteria: lightweight, doesn't take up much space, and serve a dual purpose. The casserole/cake pan has a plastic cover which will work well on the move. Perfect for Nanaimo Bars!

Most of you are probably wondering...what is a Nanaimo Bar? It is a sinfully-rich dessert bar which was invented in Nanaimo, B.C.

Nanaimo is a city on the east-coast of Vancouver Island. Its roots are in logging and fishing. You have to take a two-hour ferry ride from Vancouver to get there

Nanaimo Harbour

Loggers and fishermen work pretty hard and burn-up many calories. So, a Nanaimo housewife named Mabel Jenkins submitted the recipe to a fundraising cookbook in the 1950s. They were originally called "Mable's Bars" and were offered in many Nanaimo cafes. Tourists, particularly U.S. tourists who would come to Nanaimo from Seattle and California on their pleasure boats started calling them "Nanaimo Bars" and the name stuck.

Or another way to get to Nanaimo is to take the Ferry from Port Angeles, WA and drive North to Nanaimo. Been there, great place!! Many other areas to visit around there on the Island.

I think I'll be able to try baking this WAY before I'll get to Nainamo, but will definitely do both and soon!

I can't wait to try the recipe, my hubby is Canadian and I have tried these in the past for him.... Needless to say they weren't very good. I will try again!

Doglady, as Cameront wrote, they can be awfully sweet. I have cut the icing sugar in the second layer down to one cup instead of two. I think the real secret is getting the custard firm enough.

crazee, did you know they won't let Rvers into Nanaimo w/o a Nanaimo-bar passport? Just show your pan of bars to the inspector before boarding the ferry.

Smiles, yes. That's another route. The Port Angeles ferry docks in Victoria. You'll have to drive the Malahat Summit though. Very pretty drive, but a bit taxing on your TV. There is a Malahat bypass ferry at Brentwood Bay (unless they shut it down). You would have to check that.

Aage, I wouldn't be surprised. I've seen some pretty big bikers there. Must be all that beer with the Nanaimo bars!

Come on Fly, I've driven the Malahat a couple of times in a Model T Ford. A modern RV should have no problem. The ferry is also a nice option. We parked in the ferry line and then had lunch in the restaurant right there on the dock while we waited for the ferry. Certainly a great way to travel north.

By the way I thought it was Mill Bay but then I may be confused with another trip.
