Hello from Colorado and Happy Thanksgiving. Your user name fits the Airstream lifestyle quite well. This spring we will head southwest and see where we end up. Traveling without a plan is a great Airstream adventure.
The single axle trailers you mention are darn maneuverable. Especially since you can tow them with a mid sized SUV designed to tow the weight, like the Jeep Grand Cherokee.
Backing a conventional bumper tow trailer is an acquired skill that doesn't take too long to develop. I used to have some difficulty with it, and now I'm comfortable with it. I tow a 86 Limited 34'.
That said, the short trailers are good for short trips. Many folks find the lack of interior room and storage space take their toll on longer journeys. Many folks trade for more length after a few years in the smaller Airstreams.
