I have always used a good glob of wheel bearing grease - when I take the hitch off the truck I put a platic grocery bag over it - makes for a good handle for carrying the hitch.

I never used to grease the ball, I am a recent convert after seeing galling. Am leaving on a trip today and have a big 'ol glob of bearing grease on it.
