The 2500 Suburban is a great choice. I've had three, an '01, an '04, and an '05. They were all great Airstream towers.

They're Bridgestone Duravis (I think) LT with E load rating... I'm pretty sure.

6.0 liter V8. It's the only option. 382 lb-ft of torque, 6 speed, 3.73 gearing.

Wasn't on the lot; they searched other dealers, found the one I wanted and traded the other dealer for it.
The problem now is that I've got to break it in before I can tow with it. And then I'm supposed to tow under 50mpg for the first 500 miles of towing!!!!!

I couldn't find a 2500 in the entire state of California in 2010 and ended up going with a truck. Good luck with the break in. Better to be safe than sorry.

As you can tell I've been looking forward to how this rig shakes out on all aspects.
(If they are) Bridgestone r265 in 245-75/16 LT E I'm also looking forward to your reports on them. MICHELIN has long been the RV'er touchstone, but reports I see about the Bridgstone m500 and r700 may cause me to change if I ever wear out the ones I have (time will get me before miles it looks like).
The optional tire/wheel size for a 2012 3/4T Sub is the same as on my truck, 265-70/17. Can't go wrong with either size would be my guess.
Does the Sub have "autoride"?

Oh, absolutely, I'm just trying to figure out some trips that will let me get up to 500 miles towing that don't require going more than 50! It pretty much rules out the interstate and major highways: we'd get run over by a tractor-trailer.

No Autoride on this one, it's got plain 'ol leaf springs in the back and torsion bars up front. If I decide to replace the tires I'll certainly look at the Michelin's as that's what I've got on the trailer already. I also have really liked Nokian tires and they've got one called the Rotiva that comes in the correct size. I think that its P metric but it's a 10 ply 121 load index tire so it'll probably handle just fine. I've got a tire guy who hasn't given me bad advice yet and has actually talked me OUT of getting an expensive set of tires or two before.
One very appealing thing about the Rotiva is that it carries the Severe Service icon which means that it qualifies as a snow tire by Oregon's chain law.

Really nice truck. You'll love it. We have a 2010 3/4 ton Chevy truck TV with the same engine and drive train and are very happy with it.
I think you should recheck your owners manual. I believe you are not to tow anything for the first 500 miles while limiting your speed to 55 mph and varying your speed. As I understand it, this primarily has to do with the rear differential gears breaking in. I may be wrong but it would be good to recheck just in case.

I am certain you will get less than "50mpg" forever though......
