I have seen Chevy Trailblazers, Dodge Dakotas, Dodge Durangos, Nissan Frontiers, Nissan Pathfinders, Toyota Tacomas, and Toyota 4Runners used as tow vehicles- albeit all of these are probably V6 and mid-size-

Might consider using a cement truck to tow instead of the Luv. Bonus, you can make your own pad when you get to your campsite.

This is some serious ingenuity! I think I'll triple-tow: Luv, then Airstream, then a tow-behind cement mixer. If I keep the bags of dry cement on the hood of my Luv, that sorta cancels out the tongue load, right?

BTW - I installed a nitro system on my Luv, so, thbbbbtttttt! I'll be passing your Ecoboost on every mtn pass.

Use the cement truck to pull the Luv, and the Luv to pull the Airstream. When the Luv breaks in half while towing, simply dig a hole, plant the Luv in it, and fill the hole with concrete. Then park the Airstream on top of the concrete.
