3/4 or 1 ton GMC van

We just purchased a Flying Cloud 28A and are considering a new cargo van as a tow vehicle. 3/4 and 1 ton GMC vans have the same towing capacity with the difference being payload. Our load would consist of 2 dirt bikes, 2 bicycles, and 2 kayaks on a roof rack. Rough estimate of the weight of all our gear plus the 2 of us is 1250 pounds. Tongue weight for the flying cloud is listed as 974 pounds with propane and batteries for a total load weight of 2226 pounds. We are also considering a Quigley 4x4 option which adds another 350 pounds for a total of 2675 pounds.
3/4 = 3200 max payload
1 ton = 4100 max payload

Would you go with the 3/4 or 1 ton option?
