Congratulations on your recent purchase of a '74 International. We have a twin to yours and the centre baths are somewhat rare.
Advice I would give to you at this time would be as follows and would include determining if your A/S is road worthy,
1) determine if there are any leaks. Important to fix those right off. Should you find floor rot - possible repairs could wait awhile depending on severity of rot.
2) determine if tires and all lighting is OK
3) determine if all appliances are working
If you are able to say A - OK to 1,2, and 3, I would tell you to get out and experience some camping.
You mentioned you and your wife have lots of ideas. Ideas are great - record them in a note book as they come to mind. Then at some point go thru the noted ideas and sort them by importance in a "to do" list.
From that point on attempt to pick one item at a time to do and by doing this you shouldn't take your A/S out of service for long periods of time. I believe it's important to get out camping on a regular basis. If you make up list of things you want to do - post your list on the forums and ask for help determining what should be done first, etc. There are many forum members that have been there and done that and are only more than willing to help you get started on the right foot.
I certainly wouldn't want you to start several projects at once and take your A/S out of service for ages.
