Interior modification questions: 2010 Inter 27fb

We just picked up our beast this past weekend and towed her 1500 miles to our home in St. Louis. We will become fulltimers sometime this late summer, once we have our rigs the way we want them. We are dreaming of some changes to the AS and would like opinions, advice, etc from anyone who has done similar or the same.
1) We would like to remove the rear dinette and bench and add a work station/office/table as well as 2 recliners. I have seen several examples on pinterest.... looks doable. I know there is duct work that runs along the port side of the beast.
2) We are going to remove the toilet and add composting toilet. Advice on where to run the venting? Has anyone removed the black tank and added a second fresh water tank? Would be an awesome change if possible.

I decided to do about the same on the seating. Currently in the process of moving the heater( not for the faint of heart)
Two recliners will now fit with a lounge table between, a cabinet over the heater with a couple of drawers and enough room on top for 2 to eat or computer space.
