There are many, many fine laminates out there, Formica and WilsonArt being two that immediately come to mind. A good store will have samples that you can bring home to try out in place. WilsonArt's glue works quite well, much better than big-box bargain brands.
I would go with 3/4" ply for the countertop surface, and build the rest of the carcass out of 1/4" ply with whitewood stringers around the edges. You can even go nuts like me with super-light Eurolite plywood. The stringers hold screws far better than the edge of plywood.
Something to keep in mind is that when you laminate two sheets of 1/8" ply together, and then torment it into a curve, you have a very strong panel that weighs a fraction of what standard construction does.
