Hi everyone. . My 75 31" Ambassador came with a gas lantern installed above the fridge. ( see attached photo ) the original owners or service manual makes no mention of this option.
I am in the process of renovating the interior and want to know if it is safe to use or worthwhile to keep?

I have used them over the years during my career with Forest Service. I just don't believe they're the risk. Lighting technology has come up with a lot more energy efficient and safer ways of making light. However, I did keep mine in our 79' ambassador mostly as a conversational piece.
I saw this light converted by running wires thru the gas pipe joint and replaced the mantle with a small LED fixture. It looked great and if he wanted he could convert it back to gas.
The gas Paulin/Humphrey light came in my Tradewinds and I've also used them in remote cabins. I've never had any issue with them. Never really considered them to be unsafe, as they are CSA listed.
