Hot Water Bypass

I have had this Atwood hot water heater in my 71 Tradewind for a few years. I'm no plumber. I would appreciate any advice on installing a hot water bypass. Obviously I am going to have to do a little replumbing. A plastic section was added when I had the Atwood installed. otherwisee, the plumbing is the original copper.

Note: 3rd photo should be rotated 90 degrees. The last photo is the bypass I just bought

What is the best material or system to splice into the existing copper water lines?

My trailer had been allowed to freeze up by the previous owner. That left many of the copper pipes expanded so new copper parts and even sharkbite connectors won't fit. If the copper isn't expanded, then there are several good choices to splice in. Where my copper was expanded I attached the pex with braided nylon tube and ratchet clamps.

Where the copper wasn't expanded I just used sharkbite fittings. Just push em on and go.
