Gas system up and running, what's missing?

I made some repairs to the gas system on this 34' 1979 Avion. Replaced some bad fittings and installed Coded Flex lines to the stove and fridge. Charged with a new cylinder and tested all the appliances yesterday. Range runs like a cadillac, Fridge now in 2stage and smooth on gas. Lost a few arm hairs over the water heater. I did however get it running and can turn on and off from CB switch. What is missing on the water heater pic? I looked all over for a way to control the water temp, and can't seem to find any thermostat. Is there one? What should the water temp be at the tap? Will this cycle on and off or is a "turn it on and off when you need hot water"? Here are a couple of pics. Everyone likes pictures, regardless of relevance. Anyone have a good pic of the water heater from the outside, I would appreciate it.

First make sure the water heater is full of water. A lot of water heaters are set from the factory and the temp is not adjustable. Let it run for an hour and see if it shuts off. I would think it should shut off in about half an hour. If it does shut off by it's self, then run a bunch of hot water from a faucet and see if it turns back on. If it does, I would say it is working OK.

I got it up to 125degF last night, at the kitchen sink. I want to say, I set my residential temp to 115deg. The pop off valve I believe says 210deg. I let it run for maybe 30mins and turned it off. Can you tell if I am missing a cover or something over the circuit board in the above picture?

Yes cover is missing.. Its black.

Well I guess I need to locate that cover. Just a little update on the temp control, I did let it run and it appears to shut itself off around the 140degF mark. It seems to control fine, but that is some really hot water.
