Help with knife switches for a noob!?

Hi everyone! I'm new to the forum and well, new to owning an RV. I have a 1995 Land Yacht 31'. I'm currently living full time in it while my house is being repaired from a nasty fire

Hopefully I can manage to not burn down this motorhome while I await my home restoration.

The question I have is; what are the knife switches actually used for and when should I be disengaging or engaging them? All three batteries have them and I'm thinking that I'm using them wrong because my chassis battery has died twice. Both times, I was connected to power and my house batteries are fine and working as expected but why is my engine battery dying? I'm not running anything on the dash (lights, radio, AC etc). The only thing that seems to be powered by the engine battery that is part of the coach are the leveling jacks but they are only powered on long enough to lower and raise them.

Do I need to be switching the knife switches up on the engine battery? Hopefully someone can help. I apologize if this was asked already as I didn't find anything in my search. Thanks in advance!
