If you are replacing an old Unlvolt with a new converter and have plenty of slack, just cut the wire right at the old unit. You won't lose but a couple of inches of wire.

If you want to preserve the original wiring, perhaps for a later transfer to another RV or as a power supply for bench troubleshooting other devices, you can cut off the exposed strands flush with the insulation, and then screw on insulated wire nuts to prevent electrical shorts. After that, just tuck the wires back out of the way. You may wish to label the ends (if you know where they were originally supposed to be routed) for future reference.
