rewiring a 49

if you were me...how would you tackle this project. we have a 49 trailwind with a very outdated electrical system and now that i have the time to rewire i really want to do it right. my plan is to run the wires through the frame as i have the floor taken up for frame reinforcement. so i have 4 outlets in the coach and i need some advice on where to place the fuze box etc. again, if you were me how would you rig this up and what components are needed? we will be having a very limited setup (laptop, stovetop, coffee maker, lights)
I appreciate any suggestions. thx
