Should I gut my bath?

I removed all of the flooring and clutter today on my 72 Sovereign rear bath and the floor as normal has some rot near the back of the trailer but nothing horrible. The bath on this unit is just so ugly and poorly laid out. Does anyone have any insight as to things to watch out for?
I am no rookie to working on campers or homes so I'm not threatened, just would appreciate some in sight.

mrrealtor, I recently bought a ’76 Tradewind 25’ that has a rear bath with original but still presentable appliances. The previous owner did not winterize so I have already repaired two pipe bursts midship and looking at a third complicated leak coming from under the counter behind the bath tub. To get to these bathroom pipes with one hand is more than difficult. Even the consideration of bypassing the leak with PEX is questionably doable. You have had experience with these small spaces before so my advice to you would be to remove whatever appliances and cabinets that will make re-plumbing convenient and ignore trying to retrofit from the inside out.
