Question 1979 Rear Bath Complete Remodel Advice

I have a gutted rear bath with no original components. I know it's a tough project, but I have no way of getting the original parts from the PO. I have already contacted Inland RV for parts and looked through the classifieds for a replacement setup.

However, I want to get this remodel done asap! Has anyone done a total bathroom remodel without using original sinks, showers, etc?
