Water Heater Performance

I have stock water heater in my 89 25ft Excella that shuts off on it's own after a day of operation without being used. Any suggestions on what to address?

Defective thermostat causing it to overheat. My 6-gallon Atwood did that when it was brand new. Replacing the thermostat fixed it.
