Water heater does not shut off (NEED REMEDY)

We recently purchased a '79 Airstream Safari and everything seems to be in good working order, but we lit the water heater and the water is getting hot but the thermostat does not seem to be working. We have turned it up and down and there is no difference. Unfortunately, we have the (ITT) thermostat and not the Unitrol, so the service manual does not give any advice on it and I can not find any on the web. Anyone have any suggestions or a parts diagram for the ITT thermostat. We are taking it on its maiden voyage in two weeks and would love to have this fixed.

how long did it run for. It takes 15-20 min sometimes to heat the water up.

May you have at least one sunny day, and a soft chair to sit in..

We had it set on the lowest possible temp and the water had gotten hot enough that you could not hold your hand under it and it still had not shut off. I was probably 10 min.

Thanks Jason. You were right, we just were not waiting long enough. It took it about 30 min. to get up to temperature to shut off.
