craigs 2 filters (in 3 stages) is a pretty good set up and very common in the big mohos now.
the 2 stage unit is outside and then another filter is located near the drinking source.
the advantage to having the main filter outside, is that it can be used while filling the tank
or with shore water through the pipes...
most a/s from the late 70s on have had under sink or in the fixture carbon filters...
so it depends some on your kitchen fixture.
if installing new kitchen fixtures,
moen and others have carbon filters IN the tap for drinking water.
or a separate line/tap can be plumbed to the counter with a 'everpure' type unit.
since i've got a moen carbon filter at the tap my outside filter is this one...

the ceramic element is important for microbes and sediment while the kdf internals add another layer of filter...
i do drink the tap water and it taste great.
