Stainless Grey Tank Gauge

There is no shortage of threads on grey tanks, but I couldn't find my answer.

What gauge of stainless is best for grey tanks? My son will weld the tank for me, but we want to make sure we have the right thickness.

Any experience with this?

Thanks,

John
