Replacing large combo tank with separates

Just wondering if anyone has replaced their combo tank with 2 separates on the modern models that have that configuration? I'm playing with the idea for a 2004 International 28' but not sure about how the plumbing is routed and whether that would make it very feasible at all, or a major issue. Anyone taken the metal box off the tank on the underside and know how the big one is attached? Would it be possible to do it all from underneath?
