I know this is an old thread, but I'm tossing out a few ideas. When I'm doing my plumbing (complete replacement), I'm trying to concentrate fittings over drain pans. I don't think this will help in a catastrophic leak situation, but it does allow one to identify emerging leaks. I'm not a fan of manifold plumbing given my hands-on experience in homes. I do think PEX is a good fit for an RV environment.
