Rear Bathroom Overhaul

I recently purchased a '73 Overlander (Ruby The Dream Stream - we have dubbed her) and want to tear out the old bathroom in the rear end (shower/tub, sink, and toilet) and replace it with a smaller version (just the toilet and sink). We have no need for the shower, and want to move the main bed to the rear of the trailer and have just a small cornered off bathroom.

Has anyone else done this kind of overhaul on their stream?
