Propane refrigerator pressure

I would like to test a refrigerator that is our of the TT, can I hook it up to the regulator and hose that goes to my propane smoker.

Only if that regulator is clearly marked as being set to eleven inches (11" ) WC (water column) pressure. If not , don't try it.
