One thing I would caution you about, is many furniture / cabinet makers have a hard time scaling things down for an Airstream. The vintage Airstream frames are relatively lightweight and you have to really be careful not to overbuild and make the new guts weigh a bunch more than what you take out - the standard frame can't handle it. As long as you keep the construction type & materials similar to the original, you should be fine - if you are going in with full box cabinets, you'll be adding alot of weight.

We rebuilt our 1956 Safari from the frame/shell in - and still kept it under 3,000 lbs.

I would say that's a pretty conservative estimate...it could be double depending on your taste in finishes and whether or not you have all the tools you need to get the job done. Ours was well over $15K and we had a smaller trailer and did all the work ourselves too.

It sold for a little over $2k - this seems to be the going sort of rate for a gutted, but not rebuilt 60s/70s 31 footer.

I was concerned about that - my furniture is typically substantially heavier than store bought stuff....My plan will be to build frame and panel cabinets, with the panels being 1/4" ply or 1/4" solid boards.

You might also consider the method that Smokeless Joe used in his Argosy project. It's described in post 93 in his Contemporizing 1976 Argosy D - opinions please thread.
