Large job, not a huge one
. I'm in the process of a shell off resto on my 27' Overlander, working solo but (more or less) full time, it took me a week to get it gutted down to the ribs. Two days and one helper later, we had the shell off, and the old floor and insulation out. I'm still in the process of sand blasting my frame, so I can't say how long putting it back together will take. We have camping reservations for the end of June, we'll cancel if we need to, but at the rate things have been going, there's a good chance it'll be back together in time. Hope that helps. I should add, though, I've been in construction all my adult life, from cabinet work to concrete. I've added new skills (and tools!) working on the AS, but nothing you can't learn via Google.
