Sorry, needless complexity with no upside is one of my pet peeves, in fact, it pisses me off just a little.
It now works, reading two separate indoor temps and both units running independently of each other of off thermostat.

After a day long visit to Airstream factory I am happy to report all now works as designed.
As I suspected the wrong room tempature sensors were wired to the wrong airconditioners. Factory re-wired AND notified production of error to avoid this issue with future dual airconditioner set ups.
I can't rave enough about outstanding service and attention to all of our detailed concerns from Airstream. They have a customer and advocate for life.

I may have spoken too soon. All is working except the heat pump. Will not come on in the main quarters. Strange it did work prior to factory visit.

Does 'heat pump' show in the thermostat window and not blow warm air from the unit, of do you not see that mode in the window?

I think in my trailer Zone 1 is the living room/kitchen and zone 2 is the bedroom.
They both run at the same time, cut on and off at varying times.
There are always hot spots and cold spots. The bedroom is always colder. I think it is because it is smaller and has less windows and no sky light.

I called factory. They called me back with engineer, service manager and The technician who had done the work. They helped problem solve over the phone and walked me through how to fix. Turned out to be a loose connection, if it happens again I'll bring it in for a more permanent fix....they were very concerned and apologetic . Hey theses things are expected after a fifteen hour drive.
Again I'll say the service from Airstream is amazing.
