Looking at the diagram ( I think ) the only way to hit the 7kw is to engage the self cleaning function which I will disable.

Another point of interest is it is a true 240/120 4 wire load, where two lamps and the ignitor circuit are tied to neutral. This is a pita when running a stove from a 240 inverter. What I have done in the past is install a small magnetic 2:1 transformer in the ovens electrical bay to run the 120 loads. This allows a straight 240 three wire only from the inverter.

Generally speaking, household appliances are not built for on the road punishment.

Most always the road vibrations will cause those appliances to fall apart.
