Princess Robertshaw Stove '60's

We're starting to tear into our Sovereign and I'm working on the Princess stove from circa 1960 and was looking for some tips or resources. My plan is to get the white parts stripped and re coated with porcelain enamel and hopefully get some safety features added with regard to gas shut off when not lit. I haven't found any experts locally yet and so I'm looking for the original manual that I know was online a while ago but is now evading my search. I'm pretty sure I'll get every part new that is available and repair the rest. What's got me a bit stumped today is how to get the main oven burner control knob off the valve!

I'm really hoping to find someone who's worked on these before and could maybe direct me towards the parts I'll need etc. I need a cooktop ring too.

I'm thinking it's going to cost more than buying a nice safe new stove but I'm OK with that.

Further developments. I got the stove top pretty clean so I'm happy with that part, but looking at the steel "tray" that you see when the stove top is flipped up got me thinking. I can remove the rust and then paint or powder coat it or something but I'm leaning towards having that whole section remade from stainless? It would probably cost about the same and be better in the long run. it's a big piece that extends over the entire stove top and back but is really simple. My plea of the day is for tips on tracking down a cooktop ring that I need. I'll pop an ad in the classifieds but thought maybe someone had seen a store that might have them.
