This is what we put in our Safari (with the matching stainless cover) and we love it. We then put a microwave/convection/toaster oven in the space below it, formerly occupied by the rusty oven. Works great for us.

Here is a pic of our cooktop with the cover folded down. (Old picture - there is now a vented wood panel that lives just above the oven to fill in that gap). When up, the cover just leans against the wall and has two side panels to hold it up and keep food from splattering. We went with the three burner model and are pleased with that decision - gives us a little extra cooking room.

I've picked out a Sharp micro/convection oven that has the optional built-in kit.
How does the stainless over work and look? They don't have a photo of it.
What types of lights did you use underneath the galley cabinets? Are they 12 Volts?
What type of fan is it? Also a 12 volts?
I'm close to renovating my Caravel. My hubby and I can't agree on installing the overhead cabinets or not??? My answer is YES!

Hi! The under cabinet lights are aircraft lights that we purchased from Evergreen RV (they're on Aurora - great folks!) They pivot so you can direct the light onto your specific work surface. Our fan is the original (cleaned and repainted). Still works great! I love the overhead cabinets - they're perfect for spices, coffee, etc. I have hit my head on them a few times, though. Ouch!
