You taught me something -- that's a single route clear across the northern tier. The tumbleweed stops blowing about the time you get to Bemidji, MN.
Itasca State Park is just south of there -- woodland, good bicycling in the park, lakes, pines, lodge/restaurant in the park, source of the Mississippi river -- high usage but probably okay if you arrive during the week.
There's a lot of forest & lakes between Bemidji & Duluth. Grand Rapids is a paper mill town. We love Duluth down by the lake --
Canal Park Shopping & Dining Duluth, Minnesota. You can stop for sandwich & coffee -- $3-5 to park in the Duluth Convention Center parking lot and you're 10 minutes walk from the heart of Canal Park. Guaranteed not to be hot weather down by the lake! There is camping at a nearby marina (really! we stayed there in May, also featured in the recent Airstream Life).
Bayfield WI is a nice little town at the Apostle Islands. It's like Door County but 1/20th the size and 1/50th the people. Just don't tell anybody! Good eats at
Maggie's. Flamingos are secondary...
Copper Falls State Park just south of Ashland WI is a beautiful north country river with lovely hikes.
I'd have a hard time just sticking to U.S. 2 in da U.P.
