You should have a great trip. Mac island is worth it - take a jet boat to the island, you'll love it. We took the time last August on our way to Winnipeg. As far as traveling down the east side of Lake Huron - Lots of camping areas. Take the Cheecheeman Ferry from Manitoulin Island to Tobermory and then head south. Great campground at Sauble Beach with its 7 miles of white sand. Carson's Campground has all amenities and you can walk to the beach. You can then travel highway 21 south to make your way toward Sarnia & Port Huron. The views are wonderful right around the lake with lots of areas to stop and enjoy. Have a safe journey.
Plus, there is a great provincial park on Lake Huron near Grand Bend called "The Pinery" if you have time and can get in. Wr used to live for four years nearby at Sarnia on the Canadian side across from Port Huron, Michigan.
