Looking for intensive Spanish instruction in Arizona or New Mexico

For family reasons we won't be able to make our customary winter trip to Mexico. So we're hoping to find a nice spot in Arizona or New Mexico where we can stay for a couple of months and attend intensive Spanish classes.

Any suggestions?

A friend of mine has been teaching spanish in the Stockton school dist for decades.Recently I asked her what would be the most effective method for me to learn spanish. With out skipping a beat she said Rosetta Stone. So it's a least another avenue for you to consider.

I 2nd Rosetta Stone! I spent two months working in Northern Italy last winter where not much English was spoken or understood. It saved my biscuits. Though I will say that most of what I remembered centered around food.
