I found some interesting action videos by paddleguy.com on YouTube. He goes into the speed and maneuverability more so than fishing. There are several others reviewing its speed. I didn't really see any that offered a review of its fishability.
It is a very cool looking kayak and it seems to be pretty fast. One video shows about 8 KPH but I know nothing about kayak speeds. It was zipping along in the ocean pretty good, however.

My wife and I have a Jackson Cuda 12 and a Hobie Outback 12 for fishing. Both of these kayaks are made specifically for fishing. We solved our transporting problem with an Airstream by purchasing a Thule Xsporter 500 that mounts to the bed of the truck with no drilling, now we can carry both kayaks on the truck when we take the Airstream. The Xsporter is a bit expensive but that was the only system I could find that I could lower for easier loading now that I have had so many birthdays. These are both sit on top fishing kayaks and are stable and easy to handle. I also built motor mounts for 32lb thrust electric motors when we want them. Youtube is a great source for those ideas. Right of the shelf the Jackson Cuda is cheaper and a better setup fishing than the Hobie but the Hobie had the Mirage drive i wanted so I created a few add-ons like additional attached tackle boxes and storage to make it a more functional. The kayak dealers offer kayak demo's and specific demo days where they bring out many boats for the public to try. You will want to do that if you think a kayak might be the way to go. Try the Jackson Cuda if you get a chance.
I never really thought about, but I guess we kill the fish when we cut off their heads.

Different fish are cleaned in different ways. I am bass/walleye fisherman but you are speaking of trout. From what I have seen you don't cut the heads off or scale trout. You gut them and (fry / bake / grill) them with their heads on. I found a youtube video that shows you how to clean trout and there are many more. Good luck but remember, they call it fishing, not catching

Usually it is straight from the lake to the grill or frying pan- no cooler-
As I am eating fish, I think to myself, "He was swimming around an hour ago."
If I am taking them home, I keep them alive until I get home- stringer and cooler or live well in a boat.
Then, filet them, put them in Ziploc bags, and freeze them.
My uncle (now deceased) and my neighbor (old timer) put them in milk jugs, milk cartons, or pop bottles with the top cut out and full of water then freeze them.

Sometimes the fish (bass, crappie, catfish, bream) are toted from the pond to the campsite in a 5 gallon bucket with pond water in it.

I'm leery I won't be very quick and I don't want to needlessly delay the event.
I'm doing it for social aspect also but it would be a good skill to have. Let you know how it turns out.
I have a live well in my bass boat. When I get back to the dock I put them in a basket at the dock. Live well or basket, if there are a lot to take up to the fish cleaning station some will perish before I can get to them. But my normal fashion is to sever the spine just behind the head. This does 2 things: it keeps them from flopping around when I have a sharp filet knife in my hand and it also lets the fish bleed out, making the filets cleaner, no blood. I understand that fish are cold blooded, not supposed to feel any pain, but if I can, I try to make it quick for them.

If you've never fished before, contact the local tackle shops and see if there are learn to fish days at a local lake or river. These are usually geared towards kids and families, but I see no reason an adult with no experience couldn't participate.

We backpack in the Sierras for 6-8 weeks all summer. We carry no meat and depend on trout to supplement our pasta and other dried food. I use a spinning rod with spinning lures such as Mepps #1 and #2, and spoons such as 1/6 oz silver or gold Little Cleos. My wife uses a fly rod and flies she has made herself. Sometimes I catch the fish; sometimes she does, but we never go hungry. Of course, we are normally fishing more than a day hike away from a trailhead. Lakes accessible by road tend to be overfished. Trout are very simple to clean and eat, compared with other fish. When I catch one, I grab its body and smash its head against a rock. When you first grab it, it tries to thrash away, but the second time you grab it, it usually gives up. I collect them on a simple stringer made of nylon cord with a metal tip. When I'm ready to clean them, I first cut off the head. Then I slit from the anal vent forward, and pull out the few guts a trout has. Then I cut off all the visible fins, and that's that. No need to scale them. It helps to have a very sharp knife. I try to cut against a log or tree limb to help keep the blade sharp. If you cut against rock, the blade will dull quickly. At first you wonder how you can ever get a grip on one so you can cut the fins off, but you figure out ways, and it becomes surprisingly fast. I can clean six trout in less than 15 minutes. We cook them in a frying pan with a little oil and seasoning. No flour or batter, because we really don't want to carry that on a backpacking trip. Of course, out there, it tastes wonderful. In town, I'm sure there are better ways to cook them.
Maybe you won't catch any fish and have to worry about what you catch. With the advent of electronic fish finders a lot of the desirable fish populations have declined in lakes and there are more fisherman out there now. When we camp at Table Rock Lake, MO we never see anyone land a fish around the campground shores despite all the bass boats cruising around with their electric trolling motors. When they give up they drop their 250hp Mercury and take off at 60 mph. A few minutes later another bass boat enters the cove not realizing that every fish in the cove has been scared off by the previous boat. There are local bass tournaments on this lake every week.
Otherwise I tie a few feet of line with a hook to a gallon jug, tie string to jug and toss it out, come back in a few hours and pull it in. Fishing?
That's termed jug fishing, not legal in some states. But if it is, there are rules and a license is required. You can tie a line to a supple branch along the shore, same effect. Some do trot lines, lines with multiple baited hooks strung between two trees, rocks, stumps, etc. Same thing as jug fishing, read the rules, buy a license, be considerate of others.
I've never been trout fishing, never got the chance. Now we have a bass boat and a new kayak. It should be interesting this fall
