We have traveled across I-10 twice (four and five years ago). We stopped overnight at two Texas state parks: South Llano River SP and Balmorhea SP. Both were very nice and recommended - Balmorhea has an amazing spring fed swimming pool however I just checked and the park is closed for both camping and the pool (for repairs and renovations). No word on timing so best check with the Texas State Park website.
We also overnighted once at Fort Stockton RV Park which was a well run RV park good for an overnight stay.
I've stayed at South Llano River State park near Junction, Tx. Highly recommend!!!!!
Just be sure and check the website to make sure they are not closed for a hunt.
If you do plan to stop at Fort Stockton then try and get reservations beforehand. I tried to follow that advice when we came back on I-10 a couple of weeks ago, but all the parks in town that I tried were already full! The lady at Fort Stockton RV Park said they'd been booked up since before Christmas.
We ended up overnighting at the Walmart and were definitely not alone. About 30 RVs with 3 of us Airstreamers that night. Temperatures dropping into the high 20s, but we had fun...
I've stayed at Ft Stockton RV Park off I-10, very good stop over with pull throughs & Restaurant on the premises. Make sure you have a reservation as stated above.

Thanks to all who responded. We did get a site at Ft Stockton RV Paul. It worked well for us. Level sites and (limited menu) restaurant were nice. The campground was full by dusk. Noted three RVs at the Walmart.
We are now at Buckhorn Lake RV Resort in Kerrville. Very nice! Cement pads, big dog park, lots of walking trails. Pretty upscale camping.

When we stopped at Fort Stockton RV Park, we had ordered dinner at the restaurant (ribs if I remember correctly). The cook had to leave at the last minute for a family emergency so the park offered us the dinner for free.
