I was just reading zacfrd's thread (31 foot excella 500 problems) and this post seemed like great info for you also...
Airstream sells some new interior components, but be prepared for the cost - - it is probably more cost effective to have a local cabinet maker build what you need. What I did with both of my coaches was take them to Fowler RV Interiors - Home where Arlene and Henry did amazing work in refurbishing my coaches' interiors. Arlene handles the upholstery, cleaning, and interior detailing. Henry is a wonderful wood worker and has made wonderful oak table tops for my original drop-leaf table (Overlander) and Credenza table (Minuet) as well as replacing a cabinet end panel that had been very badly damaged during refrigerator replacement -- and the cabinets in the Overlander were completely refinished to match the original golden oak.I don't personally have experience with them, but Kevin (overlander64) has lots of good information and posts and I would trust his opinion. Their website has testimonials too.
Good luck with your projects!
