Large cracks in ceiling around the post's between the Galley and Sleeping area...

Right above the divider door....Question, I have these large cracks (lots of holes where CO and Fire alarms were attached). I'm trying to figure out how to repair them and was thinking of leaving the vinyl attached and upon removing and rebuilding Kitchen cabinettes actually do the Galley in aluminium on the inside counter top through ceiling....kind of like the new ones but keeping it just in the Galley area. What do you think? How difficult is that aluminium skin to work with? Thanks, A.
