Interior Panels

Be gentle, newbie here. A few questions. I have a 67 Airstream completely gutted. The plan (dream) is to come back with a modern interior- specific questions:
Looking for recomendation sealing the inside seams and openings before I insuate the walls- I've been following the exterior posts- think I have a handle on the exterior. Material, method, and any tips are greatly appreciated.
Want to have a polished aluminum interior walls- what would be the specification on the material- can I get pre-polished material?
Again, thank you all for your knowledge, and I look forward to any advice- my apologies if these topics have been covered- this place is huge!
