You might consider getting 12-volt versions of the appliances you mention, although I am not sure if the BC has such a "cigarette lighter" outlet like old Airstreams did? As you have noted, your 120-volt outlets only work on shore power.

The boating world has had 12-volt appliances for decades.
Adding an inverter would be more complicated than adding a 12-volt outlet IMO.

PS -- No matter which route you take, the limited battery storage in a BC may prove challenging. Get a foot pump for air pressure, and a propane/butane camping grill/burner to use instead of the Instapot?
