79 Sovereign Twin Bunk beds?

Hi, We have our new to us 79' Sovereign 31' center twin beds, we are in the process of remodeling and I was reading in my owners manual that there was a kit to convert to bunk beds. Is this possible, because what we want to do is remove one of the center twin bunks place it over the right side bunk (door side) and use the space left for a table. We're gutting the front section down to the walls now.

What are you going to do with your gaucho? I am looking for a Face Frame Assembly for the Front Travel Lounge (Gaucho).
The Face Frame Assembly consists of three tambour doors mounted in an aluminum frame trimmed in the dark oak trim of that era.
