Questions About Rewiring a 1992 Excella

I'm rebuilding a 1992 Excella. I'm trying to decide the best size wire I should be using to wire my new 12V system. I'm wondering if it makes sense to up size all of the wiring. I don't have much experience with 12V. I do know some sources require 10 gauge and others 12 gauge, others 14 gauge, etc., but in many cases I see where someone recommends stepping up a size or two. I'm seriously looking for advice here.
