What size

Any thoughts on what I can tow with a Jeep Grand Cherokee with the 5.7 hemi rated for 7200 lbs?

Pretty short wheelbase and you don't want to go much beyond 80% of your rated capacity or 5760#. Pretty much leaves 16' or 19'. Older are lighter than newer. Also need to consider what misc gear you'll be dragging around in the back of the jeep.

Medium-sized V8 SUVs can be good tow vehicles, as long as you're being reasonable on trailer length, and using a high quality Equalizer-typr, dual-cam type, or Hensley type hitch. The wise members of this group will alway caution you on your Jeep's 110 inch wheelbase. I have a comparable vehicle in wheelbase size (114 in) and tow rating (7,000 lbs), and it tows the 22 ft well (trailer 3680 lbs loaded). With the larger V8, you'd have plenty of power/torque, but for handling and control a good antisway hitch is mandatory. I certainly wouldn't go any bigger than than a 22.

A local dealer is telling me I should be able to do the 23' Safari SE - 6,000 pounds. Sounds like the Hensley could make that a lot easier?

Yes, it would. It's a signficant cost over other hitches, but many feel it is worth the investment. There's a great Hensley-Arrow resource right here on the group, to help you decide if you want to go that direction:

You'd still be pushing the weight a bit at that much of your capacity, and would need to really watch how much you carried in both the TV and the trailer.
