You could remove the curbside seat pretty easily, and perhaps remove the table and find a free standing table and a more comfortable chair? Just a thought. The streetside seat has your fresh water tank and water pump and lots of wiring under it so that is not a good thing to change or remove. You could also replace the bolster cushion with a custom made lidded compartment for storage. We've thought of doing that because it is sort of wasted space.
We have a 19' which as the same dinette set-up. We don't do it often but you can put the table down and put it back together like you would for a bed...but then instead of using it as a bed, use the bolster cushions lengthwise (fat ends togther in the middle) under the front window to create a lounge area with a back...it's quite roomy and comfortable. You can add depth to the back (and shorten the seat area) for more of a couch effect by uing the seat cushion backs in front of the bolsters instead of at the ends...then you have the seat platforms exposed at either side as a hard surface ... sort of like end tables. It changes the whole space quite dramatically. The nice thing is that his does not require any renovation...and you can have the dinette back when you want it. Experiment!
