The original water tank is available for your 67.

All the other parts for the water system are available as well.

Check valves, pop off valve, possibly parts for the water pump, depending on the make and model, are also available.

You can consider something like the tank and pump combination I used:
26 Gallon Marine Water Tank 52 X 11.75 X 10.75 04-W1113.
... and the pump...
Shurflo Revolution Pump

Location of systems, etc.

I'm in the same situation as Time2Shine:
I just bought my '69 Overlander, and am getting ready to start repairing the Utility Systems.
Where can I obtain a service manual for the trailer, showing location and routing of devices?
Silverleeper's post shows several diagrams, including the water system.
I haven't even located the water tanks, etc, yet.
Where are all these located, and how do I physically get to them?
Are they under the floor? How do I access the water and waste tanks, and plumbing?
Is there a "Chilton's" type manual for Airstreams, or original factory service manuals, etc?
Thanks!

I am just about to button up my overhaul of my 1968 GT. I used the factory owners manual, you can find copies of yours if you look on Ebay. All manuals can be found as copies, sometimes originals. Also there is a very good repair manual covering 3-4 major size models, 70's-80's. I am on year 2 to finish her up. Check the photos under trailers-Globetrotter to help.

Service manuals are available starting in 72-73.

They are very close to your 69.
