My guess is because it’s expensive and most buyers wouldn’t have much interest in the frame material. They would be troubled by the increased cost. Also finding skilled labor who knows how to weld aluminum is undoubtedly another issue.
I’d prefer Airstream use a rot free composite board (e.g. Coosa) rather than plywood for the floor. The frame if painted correctly is less of a concern to me.

The problem with building frames out of aluminum, is that in order to maintain the same tensile strength of any given piece of steel, the aluminum piece must be thicker; thusly any weight savings is almost nullified, but the costs double. Welding really thick aluminum requires a very skilled welder.
