Help needed on means and ways

Greetings

This weekend I installed a new refrigerator. I replaced a Dometic 2662 with a supposed replacement match Dometic 3762. I discovered that the Handles and trim are cause for grief.

The new style handles are side style with the unlocking mechanism side push down. The old style had front handles with top lock latches. The problem is that the fridge in my AS in encased with a trim. Is it wood? Can it be cut as wood?m (note the lighter colored strip at the edge of the fridge. It blocks the ability to get at the new door handles. What is the best way to easily trim that trim piece?

Almost done

Here are some other pictures of the job. I also added a wall mounted TV while the fridge was pulled. I added a metal plate for support of the weight as well.
